452.—Maltsters

fireman (malt kiln), firer (malt kiln)
washes couches (places where steeped grain is massed), fires furnace of kiln, regulates draughts and temperatures, and is responsible for keeping fires regulated as directed by kiln foreman (451) q.v.; sometimes specifically designated, e.g. night fireman (on night shift).
floor and kiln man
combines duties of floorman q.v. and fireman q.v.
floorman
is in charge of a gang of labourers, who steep grain in a pit under hi's direction; supervises hoisting of steeped gram (after water is run off) on to germinating floor, where grain is spread evenly on floor and turned over constantly under his direction by same or another gang of labourers; decides when grain has reached required state of germination.
kiln man
(i) (brewery or malt kiln), see fireman (malt kiln);
(ii) (distillery) turns over grain on floor above a kiln constantly, with a shovel, to ensure that it is all dried equally; usually also carries malt in sacks to kiln, empties it on floor above kiln, and resacks it after drying; sometimes also stokes fires of kiln.
malt dryer
is in charge of a gang of labourers who shovel grain off germinating floor into drying room, placed immediately over a coal-fed kiln, where grain is turned over constantly, to allow heat from furnace to dry whole equally; supervises gang stoking furnace, turning grain and shovelling dried grain into sacks or travelling chute.
malt maker
(i) see maltster;
(ii) see malt man.
malt man ; malt maker
(i) general term for any worker iin a malt house, e.g. floorman, maltster;
(ii) (distillery ) is responsible for malting of barley for distillation of potable spirits; steeps barley in cistern; levels or couches grain on germinating floor; breaks down couch after barley has begun to grow, according to temperature and rate of growth, aerates and cools malt by turning with shovels or by ploughing with hand plough; sprinkles with water to assist .growth when necessary.
malt roaster
is in charge of a gang of labourers who empty malt, from sacks, into gas-heated cylinders; moves a lever which causes cylinders to revolve slowly over gas jets; stops machinery, and turns out gas, when malt is considered to be roasted to correct degree, e.g. black, brown, crystal or amber, according to degree of roasting, as determined by foreman; supervises work of labourers who remove malt with wooden rakes, and load it, when it is cool, into sacks.
maltster ; malt maker
loads malt into kiln; spreads it out, to required depth, on asbestos floor of kiln, and turns it over from time to time to prevent "growing"; also takes in sacks of barley into malt house, and stacks them.
underhand maltster
assists maltster q.v., in loading and unloading of kiln, in spreading it out on floor of kiln, and in turning it over from time to time.
