455.—Cellarmen

bottler
(i) (wine); wine cooper; fills wine bottles directly from cask by means of a cran (measure) tap inserted in it, or from syphon pipes fitted to a small trough into which wine is run, or by means of a rotary power-driven syphon machine; passes filled bottles to rotary table of corking machine;
(ii) (spirits) fills bottles with spirits or liqueurs by means of the rotary machine, and passes filled bottles to corking machine.
cellarman, cellarer
(i) looks after stock, bottles, casks, seals, etc., and fills, labels, and seals casks; keeps cellars within certain limits of temperature by heating and ventilating as necessary and keeps cellars and racks clean and free from damp; sees that wine receives careful handling and in general ensures that wine is not spoiled in maturing; may also do work of resiner (459) and topman (458) q.v.;
(ii) (in hotels, clubs, etc.) receives, stores and taps barrels of beer, etc.; stores and issues wine and spirits, etc.; attends to beer engines, connecting engine to cask by pipes, as required.
wine blender and taster ; wine mixer
blends wines, taking care not to mix those of widely differing chemical properties, or whose flavours will not harmonise; in small cellars, is sometimes employed part time in bottling, in packing, and in other duties of cellarman.
